Step-by-step instructions
What you'll need
- Chemex (6‑cup or 8‑cup)
- Chemex bonded paper filter
- Freshly roasted Golden Sheep Coffee beans (or purchase pre-ground)
- Burr grinder (if using beans)
- Kettle (gooseneck preferred)
- Scales
- Timer
- Clean, filtered water
Recommended Recipe
- Coffee: 30g
- Water: 500g at ~94°C
- Grind: Medium‑coarse (slightly coarser than V60)
- Total brew time: ~3:30–4:30
This ratio gives a clean, sweet, and well‑structured cup.
Step 1 - Prepare the filter
- Fold the Chemex filter so the triple‑layered side sits against the spout.
- Rinse thoroughly with hot water to remove papery flavours and preheat the brewer.
- Discard the rinse water.
Step 2 - Add your coffee
- Place the Chemex on your scales and add the ground coffee.
- Gently shake to level the bed.
Step 3 - Bloom
- Start your timer.
- Pour 60g of water evenly over the grounds.
- Let it bloom for 45 seconds.
This releases gases and sets up an even extraction.
Step 4 - Main pour
- Pour slowly and steadily in small circles, keeping the water level consistent.
- Aim to reach 300g by around 1:45 minutes, then continue until you reach 500g total.
Step 5 - Let it drain
- Allow the water to draw down naturally.
- The total brew time should land between 3.5 and 4.5 minutes
Step 6 - Serve and enjoy
Remove the filter and give the Chemex a gentle swirl to combine layers before pouring
Step 7 - Taste and adjust
- Too sharp or light: grind finer or increase total brew time
- Too bitter or heavy: grind coarser or pour more gently
- Too weak: increase dose slightly
- Too strong: reduce dose or increase water
